Bay Water Bagels opened January 31, 2025. Our products are small-batch, carefully crafted and flavor-forward. We bake our bagels to a deep golden brown with intent to achieve a rich caramelization for added depth of flavor. Each bagel is hand rolled and given an overnight fermentation period in the refrigerator before boiling and baking. With every product we make, we meticulously develop, test, and refine our recipes before they are added to our menu.

My Story

I'm Gabrielle, the baker and owner of Bay Water Bagels. I am originally from Boston. My husband (a Vermonter) and I met 8 years ago while living back east. We are a military family and have two young daughters.  From 2021 to 2024 we were stationed in Hawaii and I found myself craving the familiar tastes of home. One thing I couldn't find was a decent bagel, which led me to some experimenting. I love to cook and bake, but knew I had my work cut out for me in my endeavor to make a great bagel. Eventually I landed on a crave-worthy bagel recipe. I opened my first bagel business in Hawaii and decided to re-open shortly after arriving in Colorado Springs. I provide premium products which, although familiar and approachable, speak for themselves in terms of taste, quality and craftsmanship.
